  1. Kale, Pomegranate & Toasted Walnut Salad with Lemon-Honey Dressing

Ingredients:

  • 4 cups (120 g) kale, chopped and stems removed
  • ½ cup (75 g) pomegranate seeds
  • ½ cup (50 g) toasted walnuts, chopped
  • ¼ cup (60 ml) olive oil
  • 2 tbsp (30 ml) fresh lemon juice
  • 1 tbsp (15 g) honey
  • Salt and pepper, to taste
  • Optional: 2 tbsp (20 g) crumbled feta or goat cheese

Directions:

  1. In a large salad bowl, combine kale, pomegranate seeds, and toasted walnuts.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until emulsified.
  3. Pour the dressing over the salad and toss gently to coat evenly.
  4. Top with optional crumbled cheese if desired. Serve immediately.
