- Kale, Pomegranate & Toasted Walnut Salad with Lemon-Honey Dressing
Ingredients:
- 4 cups (120 g) kale, chopped and stems removed
- ½ cup (75 g) pomegranate seeds
- ½ cup (50 g) toasted walnuts, chopped
- ¼ cup (60 ml) olive oil
- 2 tbsp (30 ml) fresh lemon juice
- 1 tbsp (15 g) honey
- Salt and pepper, to taste
- Optional: 2 tbsp (20 g) crumbled feta or goat cheese
Directions:
- In a large salad bowl, combine kale, pomegranate seeds, and toasted walnuts.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until emulsified.
- Pour the dressing over the salad and toss gently to coat evenly.
- Top with optional crumbled cheese if desired. Serve immediately.
